Marshmallow Mondays

A little while ago, Rydan received a large envelope in the mail.  Since I already knew what was inside, I was anxious for him to open it up.  When he looked at the return address, he noticed that it was from his school in Pennsylvania.  After giving me a funny look, he opened up the envelope and found handwritten letters from his teacher and classmates at Rheems Elementary.  As we sat down together to read each letter, Rydan’s eyes lit up when he saw who each letter was from.  He giggled at some of the things each student wrote, and I could see his young mind reminiscing about the fun times he had with his old friends.  Many of the students asked what Rydan got for Christmas, how he likes Kentucky, and what the name of his new school is.  It was a really thoughtful way for his teacher to let Rydan know that he was a special part of her class, and that he is missed.  I also thought the whole project was a great way to teach her class about life changes that are sometimes out of a child’s control, such as a move to a new state.

This package put a huge smile on Rydan’s face, and for that I want to say thank you to all of the students in Mrs. Adams’ second grade class at Rheems Elementary.  Rydan felt so special to know that you all spent time writing such thoughtful letters to him.  He still talks about all of you quite a bit and misses each of you!

I also want to say another huge thank you to Mrs. Adams.  For Rydan, our move to Kentucky has been a very positive experience, but Ryan and I can’t take one hundred percent of the credit for that.  His teachers, past and present, have played a big role in encouraging Rydan and reassuring him that he would be just fine in his new school and new home.  Because of your enthusiasm, you’ve helped Rydan adjust to life in Kentucky smoother than we ever could have imagined.

I’ve been trying out a few new recipes lately, and thought I’d share this particular one with all of my readers.  It was extremely simple to make, includes easy-to-find and inexpensive ingredients (cost per serving is only $1.21!), and was enjoyed by everyone in our house.  I prepared it in a matter of minutes on a Friday night and popped it in the oven on Saturday morning.

Overnight Peaches & Cream French Toast

Above is actually the one that I made.  It turned out just like the picture!)

The only thing I would change about the recipe, is that I would cut the amount of eggs and milk in half.  It seemed like a lot to me, and a few pieces of french toast in the center of the pan were slightly sloggy.  I also used one percent milk instead of whole milk.

I’ve had a lot of fun the past few days preparing for Valentine’s Day with Rydan and Lily.  We spent an evening last week making our own valentines out of a $5 kit I had bought from Target.  As always, Rydan’s creativity went wild and Lily simply enjoyed playing with all of the sparkly hearts and letters.

I especially liked the valentine that Rydan made for Lily…

Thanks to Pap Wiest, Valentine’s Day arrived a few days early when a big package arrived at our door step.  Inside were tons of goodies, but what made the package extra special was all of the “marshmallow-inspired treats,” like the bag of heart-shaped marshmallows, chocolate-covered marshmallow hearts, and pink marshmallow rice crispies.  Also included were two stuffed bears, two books and our favorite… two jars of Reeses’s Peanut Butter, straight from Hershey!  WE LOVE YOU, PAP!

After receiving such a big treat box, Rydan asked me if he has school on Valentine’s Day.  What a kid.  Although, I totally understood his line of thinking.  Holiday gifts usually mean days off of school.  I figured it was a good time to get his Ninjago Valentines out, so after he remembered the annual valentine exchange in his classroom, he got a bit more excited.

And as with any holiday, I can’t resist the temptation to be festive in the kitchen.  This Valentine’s Day, I made a V-Day Chex Mix, which turned out to be a big hit.
